“ The food and service of this establishment are top notch. My boyfriend and I went in and started the night with a lovely, smokey old fashioned and shrimp tempura appetizer, which started our pallets off just right with the 10 oz prime ribeye for myself, and the “Chop Experience,” which included a 25 oz wagyu steak for him, both of which were absolutely phenomenal. They brought out the wagyu steak as if it were a Birthday party and branded it right before our eyes before cooking it, complete with sparklers and the whole “nine.” The whole experience and atmosphere were out of this world and we cannot wait to come back to try the rest of the menu! One more thing to add, the Owner was not only greeting the customers, but helping Staff buss tables, which is a rare and pleasurable sight to see! Pueblo needed this place. ”
“ What a WOW for a Friday night in Pueblo! Lots of parking and great view with large windows. Staff were extremely attentive and kind! Bar staff did an awesome job on martini-the lemon drop was great! The espresso martini could have been dessert, it was so good. Prime cut of steak that was cooked to perfection with great sides and dessert. Highly recommend. ”
“ I was in town to hike and went out looking for a healthy meal. Chop has the highest ratings in town and serves several seas food options. I was very surprised that the restaurant is located on a college campus, don’t let that detour you. The staff were all wonderful. I had the special which was a redfish covered in a crab sauce. Not a bad meal! ”
“ Booked on a holiday, so no students around. As soon as we walked up, we were greeted and offered a cocktail. We ordered the bread basket with the honey truffle butter....SO addicting. As a warm up, we had the baked brie salad. This is huge and there was more than enough for three. Main course; 2 of us ordered the 8 oz filet, while another ordered the ribeye with special lobster tail. Only criticism is that chairs are too hard ( need a cushion), and the steak knives offered were very thin-I like a big beefy handle to cut my food. Overall, the seasonings were great. Food has wonderful flavor. Servers work hard to make it special. We will be back. ”
“ Our experience at Chop was wonderful. Our sever, April, was appropriately attentive and gave helpful recommendations. As a blue steak enjoyer, this is the first restaurant in Pueblo that has delivered me a truly blue steak. Between the delicious and bold cocktails and the quality of the steak, I didn't realize until more than halfway through dinner that I had been using the butter knife on my steak with no problem; that's how tender it was. 10/10 would recommend this restaurant for both the food and the atmosphere, certainly my new favorite establishment. ”

I had no idea this exceptionally wondertul restaurant existed at the Pueblo Community College until I went to an outdoor event and saw a very elegant looking restaurant with an outdoor patio. My friend & I tried it out & were amazed at the delicious food; the excellent service & the mellow ambiance, with authentic French music in the background. I can hardly wait to return! Bon apétit! ”
“ By far the best steak! Top 5. Location can throw you off being in the community college but the atmosphere when you step in is classy and upscale. April our server was professional, attentive, and hospitable. She was a joy to talk with. Definitely a place we will return too as our teenagers would love this! A must try! ”
“ Pleasant surprise after a long day at an event on PCC campus! Great patio area with firepits, couches and a view of the campus park area.. I had the baked redfish, my wife had the filet. Both perfectly cooked. The indoor area looked very nice too with a nice bar. Our server Ryan was awesome, he's a keeper. Get the bread and honey truffle butter for an appetizer. We didn't have room for dessert. Maybe next time. Definitely a do-over. ”
